Nitro Oreo Cupcakes

  • 3oz finely chopped bittersweet chocolate
  • 1/3 cup cocoa powder
  • 3/4 cup hot stout
  • 3/4 cup flour
  • 3/4 cup granulated sugar
  • 1/2 tsp table salt
  • 1/2 tsp baking soda
  • 6 tbsp veggie oil
  • 2 eggs
  • 1 tsp vanilla extract
  • Oreos


Place beer in a saucepan, set to high heat on the stove. Right before it begins to boil, pour the hot beer over the cocoa powder and chocolate in a small bowl. Whisk until smooth and transfer to a refrigerator to cool completely, about 20 minutes. Combine dry ingredients (except oreos) in a medium bowl; set aside. Combine wet ingredients and eggs into cooled chocolate/beer mixture until smooth. Add to flour mixture and whisk until batter is smooth. Line a cupcake tray with cupcake liners; pour a small layer of batter into each tin, then place an Oreo in there. Cover with more batter until 3/4 full. Bake at 350 F for 17-20 minutes. After cooling completely, top with vanilla icing or marshmallow cream, and garnish with crumpled Oreo bits.
