Corrupted Ossobuco



  • 4 beef shanks
  • 3 carrots chopped
  • ½ onion chopped
  • 2 cloves garlic chopped
  • 1 12 oz can chopped tomatoes
  • 1 cup Chainsaw (flat)
  • Cajun seasoning to taste
  • salt to taste
  • 1 bay leaf
  • 2 tbsp butter
  • 2 tbsp olive oil


Preheat oven to 325 Heat a Dutch oven on the stove top; add the olive oil and butter. Brown the seasoned beef shanks on both sides. Remove shanks. Add the veggies and garlic, sauté until tender. Add the tomatoes, sauté until simmering, add bay leaf. Put the beef shanks on top. Add the Chainsaw Ale, cover and put in the oven. Bake for 1 ½ hours until the shanks are very tender. Remove from oven, take out the shanks, and keep warm. Reduce the sauce to correct consistency (Don’t eat the bay leaf). Pour over the shanks. Garnish with Gremolata 2 tbsp lemon zest 2 cloves garlic finely chopped 1/3 cup chopped Intalia parsley Serve polenta sautéed in olive oil and a nice pint of Chainsaw Ale!
