Smoked Gouda Mac & Cheese

  • 1 lb noodles cooked (elbow or penne)
  • 4 tbsp butter
  • 4 tbsp flour
  • 4 cups milk
  • 1 ½ cup shredded smoked gouda
  • 1 ½ cup shredded Dubliner cheese
  • 1 cup shredded Colby cheese
  • ½ tsp salt
  • ½ tsp pepper, Paprika


Heat oven to 400 degrees. Cook noodles and drain. Melt butter over medium low heat in a medium saucepan. Combine flour and whisk for 2 minutes. Combine milk and whisk for 5 minutes. Add salt and pepper and cheese (Leave ½ cup of smoked gouda and Dubliner each for topping). Pour noodles into slightly greased 13x9 pan. Pour sauce over noodles and lightly stir noodles and sauce. Sprinkle top with remaining cheese and paprika. Cook for 20 minutes. Enjoy with a glass of Fade to Black, Volume 2!
