Coconut Curry Chicken

  • 1 can lite coconut milk
  • 1-2 tablespoon red curry paste (amount depends on desired spice level)
  • 1 med yellow onion diced
  • 2 diced carrots
  • 2 large chicken breast diced


Heat coconut milk up on medium heat, while mixing in curry paste. Add chicken breat to coconut curry mixture on stove. Saute onion and carrots in separate pan. Add onion and carrots to curry mixture when onion are translucent. Cook until chicken is cooked all of the way through. Pair with 400 Pound Monkey IPA!
